Jeff Boyce's Veggie Burgers
  • 1 (16 ounce) can black beans, drained and rinsed
  • 1/2 green bell pepper
  • 1/2 onion
  • 3 cloves garlic, peeled
  • 4 medium sized mushrooms
  • 1 egg
  • 2 tablespoon chili powder
  • 2 tablespoon cumin
  • 1/2 cup bread crumbs
In a food processer, combine the beans, pepper, onion, garlic and mushrooms. Blend until the beans are "mashed". Transfer beans (and the rest) to a large mixing bowl. In a separate bowl, combine the egg and spices.Add the egg/spices to the beans and mix well. Add the bread crumbs gradually to the beans mixing well before adding more. Keep adding bread crumbs until the texture seems right (sorry, I don't know how else to say this).Texture will be right when the mix will patty up and hold form. I would recommend cooking up a small batch (this makes 4) and then play with the mushrooms and the bread crumbs to find the flavor and texture that you like. Cook in the oven on a lightly oiled piece of foil. 8-10 minutes each side at 175 C.
